Honey Mustard Tomato Tart

~Inspired by Hellen Rennie's tomato tart

This tart is a HIT at my house. It's pizza meets tart. literally. and can be served at anytime of the day.

You can add or remove ingredients. It always manages to taste exquisite.

Ingredients:

  • pie pastry (I make my own using Hellen Rennie's pastry)
  • cherry tomatoes (250 g)
  • honey (2 tbspoon)
  • dijon mustard (1.5 tspoon)
  • herbs (rosemary, dill,.etc.)
  • gruyere cheese (optional)
  1. Preheat your oven at 170C.
  2. Start by rolling out your pastry. Beat it with your roller once before rotating it and beating again. Continue to rotate until you can start rolling out your dough. If there are any cracks, press the dough together with your fingers.

3. Place the tin on the flattened dough to ensure its evenly rolled before placing the dough on the tin and cutting out the extra edges. Then, place your parchment paper and weights on to the dough for a prebake. I use beans, but you can use rice, pie weights, sugar.etc.

4. Bake in the preheated oven for 45 minutes.

5. When golden, remove the beans and parchment paper. Mix the honey and mustard and evenly layer it on the pie crust. Now is the time to add your cheese of choice. Then add the tomatos cut in half. Decorate your pie with herbs and drizzle with some olive oil.

6. Finally, bake at 190C for 35 minutes. Your crust will be golden brown.
